Cheese Quesadillas and Sauteed Fruit & Veggies...
I was just too lazy to pull out some meat, so I raided the fridge of fresh veggies and fruit…
I pride myself on being able to make a meal out of just about anything, and not that this one was tricky at all, it just felt good to put the veggies to good use.
For the Quesadillas, I lightly buttered one side of flour tortillas and grilled one side, topped with a thin layer of Colby-Jack cheese in a skillet on medium heat. When the cheese was par-melted, I set the second tortilla on top, then flipped it. I cooked both sides until they were a crispy, golden brown.
For the sauteed fruit and veggies, I sauteed red and yellow bell peppers and shallots in olive oil until slightly tender. I added a dash of kosher salt and fresh ground black pepper. I added broccoli and Red Delicious apple, tossing until a light golden brown. I topped it off with some fresh basil and white wine vinegar (just a splash), then immediately transferred it to the plate.

Yes, the veggies & fruit taste good cold as well…
