Saturday’s Late Afternoon Dinner...

Whenever a friend stops by, it’s mealtime. It doesn’t matter if it’s 10 a.m., 3 p.m. or the wee hours of the night. My friend’s know that if they stop by this house, they need to show up hungry.

Having not cooked in a week (I feel like dirt because I ate take out while working a storm after a coworker died), I needed a meal to feed my blood. Enter: the Filet Mignon, medium rare, quick-seared in my well-seasoned iron skillet.

My plating was horrible, but the meal was savory, and it was a warm welcome that beckoned me to return to the kitchen again as quickly as possible. And though we didn’t eat until 4 p.m., it held us over until our 8 p.m. snack while we met up with others to dine on cheese, crackers and champagne, watching Shakespeare in the Park.

Filet Mignon, Tortellini Alfredo and Apple Walnut Salad

FILET MIGNON:
BJ’s had them at a decent price; these 6 1/2 oz filets were splendidly red. I heated the iron skillet on medium-high, then dropped it down to medium. A dashed Kosher salt and fresh ground pepper on each side and seared them to a deep golden brown.

TORTELLINI ALFREDO:
Okay, I cheated. I used pre-made tortellini (frozen). But the sauce was fresh. I used two cloves of garlic (I like it spicy!), 1/4 cup fresh parmesan (the ONLY kind to use), 1 tablespoon butter, two pinches of fresh ground black pepper, and 1/2 to 3/4 cup cream (I eyeball it). I have a Magic Bullet that makes this task easy and less messy than pulling out the food processor.

After the Tortellini was cooked I tossed it in the sauce, plated it, and sprinkled pepper on the top.

APPLE WALNUT SALAD:
I used this fave of mine as a side, and topped it with some Feta cheese. You can get the recipe for the salad right here.
