The Skillets I Use...

With everything I cook, most think I have every skillet known to man. Fact is, I keep it simple.

Here’s what I have along the lines of skillets in my kitchen, and why.

Circulon: I have three Circulon skillets, and I adore them all. My belated aunt turned me onto this brand, which requires less heat and little, if any, oil.

  • 8-inch french skillet - used for cooking chicken and vegetables for 2-3 servings
  • Toss and Turn skillet - I used this for sauteeing shrimp and vegetables as well as cubed chicken and other meats
  • Square Griddle - this one is shallow and perfect for fish and restaurant-style French toast

Lodge: I have two iron skillets - a small fajita pan (it was a gift, and I use it mainly for 1-2 burgers or filets), and a 12-inch skillet with handle, which I use for stovetop and baking, and crispy French toast, as well as frying chicken and okra. I also use these on the grill.

Betty Crocker: As I cannot yet afford a Calphalon stainless steel skillet, I use a knock off by Betty Crocker, found on Cooking.com for a mere $15. It actually does quite a good job as an interim pan.

Oneida: My first non-stick skillets are 10 years old and I have two of them. I rarely use these anymore unless I’m honoring my husband’s request to fry some frozen SeaPak shrimp. It’s actually time to dump these.

Wok: I don’t know the brand, and it was a gift. I use this for various things, and I often use it on the grill.

I also have my mother’s old copper-bottom 8-inch stainless steel skillet. This things probably 35-years-old and it’s quite beaten up, but it’s perfect for frying eggs and sauteeing tomatoes.

What I miss: The lady who taught me to cook was in her fifties when I was born. She cooked with her grandmother’s iron skillets and pots, and these were left to me. Unfortunately, in the final years of their use, before being turned over, they were left uncared for and were quite damaged. It’s a shame, because they were the best skillets and made the best-tasting French toast and fried chicken. After unsuccessful attempts to find good, rather old iron skillets at many yard sales, I was forced to get a new one from Lodge.
