Crispy Stuffing Balls...
Wondering what to do with all that leftover stuffing after the holidays? You could freeze it for later, but it can also be used to make a tasty appetizer for the next day’s dinner.
Alternatively you could use fresh made stuffing that’s been chilled, even from a mix. These crispy, golden brown appetizers work well any time of the year.
INGREDIENTS: (scale to desired portions)
Fresh made or leftover stuffing, chilled
1 to 2 eggs (depending on amount of stuffing; use 1 egg for about 4 cups of stuffing)
cubed mozzarell (preferrably fresh)
breadcrumbs (scalable, at least two cups)
peanut or vegetable oil
DIRECTIONS:
- Using hands, mix egg with stuffing until mixture is moist and formable.
- Roll mixture into 1-inch balls and stuff each with small cube of cheese.
- Roll balls in breadcrumbs until completely coated.
- Fry balls in oil set at 350 degrees F until light golden brown, then remove and set on slotted rack to drain.
Allow the balls to cool slightly before serving. Don’t forget to try one for yourself.
Note: I use a cookie cooling rack. A rack serves better than paper towels, which actually leave the deep fried goods bathing in the drained oils.
