Cook or Trash Chicken and Little Time...
The other night I had some defrosted, cubed chicken that beckoned, “Cook me, or throw me out.” In an effort to savor every dime of food in the fridge, I whipped up a make-shift bourbon sauce and turned on the heat.
I wasn’t looking to create a full meal. I was looking to save that chicken from hitting the dump truck the next morning. Besides, my husband and I had been eating so much sugar over the holidays, we didn’t need the rice.
If you’ve got but a few minutes, and some lingering chicken, here’s a quick fix to turn it into golden brown deliciousness.
Get out a bowl and pour in a few shots of bourbon, a few splashes of soy sauce, a dash of garlic powder and a few spoonfuls of dried or raw chopped onion. Then drop in some brown sugar (start with half a cup for sweetness, and add more if you want it sweeter). Toss the chicken in then dump it all in a pan on medium heat.
Keep in mind since this isn’t slow cooked or overnight marianted, the chicken isn’t going to absorb the flavor throughout. You’re essentially making a sauce, and nothing more. But if you want more of that sauce flavor with each bite, you can use a bit of flour to thicken it in the pan.
Total prep time is about 15 minutes. You could easily turn this into a meal by tossing him some large chunks of onion or even some mushrooms near the end.
